2018 Winter to Spring Wine Dinners at Mac's Fish House Provincetown

SIX COURSE MENU
Amuse Bouche: Oyster with watermelon ice, Thai basil oil
Pork Belly Nigiri with sesame BBQ, togarashi (seven flavor chile pepper spice)
1st Course: Machi Cure Smoked hamachi, yucca chips, Asian Pear, golden raisins, Marcona almond
2nd Course: Tuna and Goat Cheese Sashimi Tuna, chevre, apples, pumpkin seed, shiso (basil-like herb, minty with hints of clove)
3rd Course: Zero Sen Roll Japanese yellowtail, avocado, yuzu kosho (citrusy hot sauce,) grilled negi onion, cilantro, miso sauce, crispy shallot
4th Course: Walu Walu Broiled escolar, candied citrus, yuzupon (citrus seasoned soy sauce) myoga ginger
5th Course: Wagyu Momo Wagyu short rib, peach kimchi emulsion, heirloom peaches, garlic chip, cilantro
6th Course: Sakura Kuro Irigoma Black sesame cake, white chocolate mousse, cherry, purple basil
