Here we are in the thick of August. It is 5:30 on a Saturday night and I'm at the Mac's Shack. The dining room is full and the kitchen is starting to gear up for another busy night. People always ask me what is it like, well, it is busy. But what is really amazing is how our staff rises to the occasion, no matter what is thrown at us. Our restaurant is set up in such a way that each department relies on a system that operates independently of other departments. At the same time, each department complements and "delivers" to all other departments. For instance, the kitchen is the hub of the restaurant but can't do its job unless orders from the waitstaff are accurate and correct. The kitchen's job is simply to "fill the order". The waitstaff's job is to take the order. It seems rather simple and straightforward, but it is great to see it in full swing with the highest quality food be prepared and delivered to the guests without a hickup. Of course it doesn't all go smooth, but it wouldn't be fun if it wasn't a challenge!
