Firm and meaty, juicy and sweet, great on the grill. Superb stacked on a skewer with summer vegetables and slathered in an herb and olive oil marinade. Still succulent even at medium doneness. Choose 2 or 3 lbs. of swordfish. We select mature whole swordfish and cut hefty eight-ounce steaks.
