Atlantic Cod

Atlantic Cod range from Greenland to the Carolinas, and have been a staple catch of local fishermen since the 17th century.
- Because it is so highly valued, marketers have taken to using the word cod when creating culinary names (such as "black cod") for unrelated species. Cod skin is mottled grey to brown in color, but it is usually sold skinless, so look for cod's white flesh and extra-round loin.
- Fishwatch––the National Marine Fisheries Service sustainability report––confirms that cod is no longer considered overfished in the Gulf of Maine. That's good news, but populations are still low. This makes knowing your sources especially important: we guarantee our fishermen are participating in careful management of this fish.
